The Best/Healthiest Ginger Cookies

I’m like the biggest sucker for ginger and/or molasses cookies. Like I LOVE THEM. So much.
And I’m not really into just totally cutting out everything when I ‘diet.’ I hate dieting so much. Even on a day 1 it makes me feel very deprived. So, in order to still eat yummies, I just try to bake healthier versions. You feel me? So here you go, a healthier and still mega delicious version of ginger cookies.
The only problem I am running into now is that I can’t stop eating them LOL.
Recipe from Cooking Light Everyday Baking (found HERE)

  • 6 tablespoons butter, softened
  • 2/3 cup plus 3 tablespoons sugar, divided
  • 1/4 cup molasses
  • 1 large egg
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground mace
  • Cooking spray


  1. Place butter in a large bowl; beat with a mixer on medium speed until fluffy
  2. Gradually add 2/3 cup sugar, beating at medium speed until blended
  3. Add molasses and egg; beat well
  4. Combine flour and next four ingredients, stirring with a whisk
  5. Gradually add flour mixture to buter mixture, stirring until blended
  6. Divide dough in half
  7. Wrap in plastic wrap and freeze for 30 minutes
  8. Preheat oven to 350 degrees
  9. Shape each portion of dough into 20- 1 inch balls
  10. Place remaining sugar into shallow bowl and roll dough balls into sugar
  11. Place dough balls 2 inches apart on baking sheet coated with cooking spray or silpat
  12. Flatten cookies with bottom of glass to 1/2 inch thickness
  13. Bake at 350 degrees for 12 minutes or until lightly browned
  14. Remove from pans and cool completely on wire racks

Each cookie has about 62 calories.
