Today I’m bringing you a slightly modified version of her ‘Sweet Potato Apple Pack.’ It’s so so good and just so perfect for winter I want to die. Nothing says holidays like cinnamon. nutmeg and cloves.
I know that Christmas has passed, but if you’re like me, you probably have a couple more holiday parties and/or a New Years Eve party that you could bring this to. You’ll encourage your friends to eat healthier without having to sacrifice that yummy warm, homey flavor.

Ingredients:
- 9 oz peeled and diced sweet potatoes
- 1 large apple (you could do a variety of apples here and add more to the ratio)
- 2 tablespoons dried cranberries
- 1 1/2 tbs whipped butter
- 1 1/2 tbs brown sugar (not packed)
- 1/4 tsp cinnamon
- 1/8 tsp nutmeg
- 1/8 tsp cloves
- 1/8 tsp salt
Directions:
- Preheat oven to 350 degrees. Lay a sheet of thick foil on a baking sheet and spray with nonstick spray
- Add all ingredients on top of the foil
- Put another piece of foil on top and seal all four edges together (this is super important since you will essentially be steaming the goodies)
- Bake for 25 minutes or until sweet p and apples are tender (I ended up cooking mine for closer to 35 minutes)
- Cut packet to let out steam- then mix all together
- Share with peeps you love at all the holiday parties
This recipe makes 2 servings and each serving is roughly 250 calories.
