The day before you want to eat your bowl, cook your sweet potatoes in your crock pot. Wash the potatoes and add directly to your crock pot without drying (the liquid from washing is necessary). Puncture with fork a couple of times and cook on low for 5 hours or until tender.
In a food processor, blender or immersion blender combine all ingredients for the bowl and process until smooth.
Top with suggested toppings above (what I had on hand) or get a little crazy. Blueberries, raspberries, coconut cream or even a little dark chocolate would be amazing on this bowl.
