Peanut Butter Oatmeal Breakfast Bars

Hi friends, happy Friday! I am so happy that we made it to the weekend! I saw a little saying today that made me smile and put me in the weekend mood: “If Friday had a face, I would kiss it.” So here we are, Friday and I 😉 What better way to celebrate than with food? Baked oatmeal bars for the win!

 

I made this oatmeal breakfast a little earlier this week and got so many requests for the recipe so I thought I would post it ASAP! Its so easy, requires very little hands on work and its hubby approved. These bars also last a couple of days so that means one less morning to prepare something.

Peanut Butter Breakfast Bars
Super-duper peanut butter breakfast bars that will knock your socks off!

Instructions
  1. Preheat oven to 350 degrees. Grease a 9x9 inch pan and set aside.
  2. In a small bowl, mix together the oats, baking powder, cinnamon and salt. Set aside.
  3. In a large bowl, mix together the mashed banana and the peanut butter. Add in the vanilla, maple syrup and egg. Mix until combined. Add the milk and stir until homogeneous.
  4. Add the dry ingredients to the wet ingredients and mix until combined.
  5. Pour the mixture into the prepared pan. Bake for 25 minutes or until just barely browned.
  6. Melt the extra/topping peanut butter or mix together the powdered peanut butter. Drizzle on top.
  7. Cut into squares and enjoy! Place any leftovers in the fridge and reheat or eat cold.
