(Kind of) Healthy Christmas Treat

Two words: sugared cranberries

Cranberries = healthy
Sugar = diabetes
But…. YOLO.
Ya know?
Its the holidays, its okay to eat a treat here and there (try not to confuse ‘here and there’ with ‘anywhere’, ‘anytime’, or ‘always’).
This is a super easy treat to bring to a holiday party, or snack on a little bit at home (when you really want pie but already ate the equivalent of like 16 slab pies….) Anyways.
Make these, they are awesome and delicious and everyone will love you for sharing.

They’re tart and sugary and delicious- all at the same time. Its like a legit party in your mouth.

Recipe from My Recipes

  • 2 cups granulated sugar
  • 2 cups water
  • 2 cups fresh cranberries
  • 3/4 cup superfine sugar

  • Combine granulated sugar and water in a small saucepan over low heat, stirring until dissolved. Bring to a simmer; remove from heat (do NOT boil).
  • Stir in cranberries; pour mixture into a bowl, cover and refrigerate 8 hours or overnight.
  • Drain cranberries in a colander over a bowl, reserving steeping liquid if desired. Place superfine sugar in a shallow dish. Add the cranberries, rolling to coat with sugar.
  • Spread sugared cranberries in a single layer on a baking sheet. Let stand at room temperature for at least an hour.
  • Store in an airtight container in a cool place for up to a week (these would totally make cute Christmas gifts for your friends or coworkers).
Easy peasy, lemon squeezy. Let me know if you like!
