Food Friday- Week 2

Hey lovely people! Remember a few weeks ago when I was like, “hey, let’s post recipes every week” and then we went on vacation and I threw all my plans to the wind? Yeah, my bad. But here we are, back at it again on another FriYAY. I post the how-to’s for what I make on instastories (@eatglitterallday) but here are the actual recipes/ingredient lists so that you can make them at home! These four are easily some of my favorite recipes and we have them in our regular rotation… when you find something husband approved, you gotta keep making it!

1. BBQ Bowl


  • 3 cups spinach
  • 1 large bell pepper, chopped
  • 1 small onion, chopped
  • 2 chicken breasts, cut into bite sized pieces
  • Salt and pepper to taste
  • 3 tbsp frozen corn kernels
  • 3 tbsp BBQ sauce
  • 3 tbsp light sour cream (or Greek yogurt)
  • 1 avocado, peeled and diced


  • Place spinach in the bottom of two bowls, set aside.
  • In a skillet sprayed with nonstick or a little olive oil, add the bell pepper and onion and cook until partially softened (about 3 minutes).
  • Add chicken to skillet and season with salt and pepper. Add corn and cook until chicken is cooked through, about 4 minutes.
  • Remove skillet from heat. Add BBQ sauce and sour cream and stir until mixed.
  • Transfer chicken mixture to bowls and top with avocado.

2. Eggplant Pizza


  • 2 large eggplants, sliced 1 inch thick
  • 24 oz jar tomato sauce
  • 20 slices of fresh mozzarella or 1 1/2 cups shredded mozzarella
  • 4 oz cherry tomatoes, sliced
  • 1 cup spinach (not pictured cause we didn’t have any on hand)
  • 1/2 tsp salt


  • Preheat oven to 425 degrees F. On a large baking sheet covered in parchment paper, arrange the eggplants. Sprinkle with salt and bake for 15-20 minutes.
  • Remove the baked eggplant from the oven and turn the broiler on. Spread 1 tbsp of tomato sauce over each eggplant followed by a slice of cheese. Arramge spinach and tomatoes on top of cheese and broil for 3-5 minutes. Watch it carefully so it doesn’t burn!
  • Boom- done!

3. Taco Rice Bowl


  • 1 cup uncooked rice
  • 2 cups water
  • Dash of olive oil
  • 2 small onions, diced
  • 1 lb ground chicken
  • 1 packet taco seasoning
  • 1 can beans (any will work but we used kidney beans)
  • 1 large bell pepper, chopped
  • 1 avocado, peeled and diced


  • In a small sauce pan combine rice, water and olive oil. Heat to a boil. Once boiling, reduce to simmer and cover. Cook for 11-12 minutes.
  • Spray a skillet with nonstick spray or a little bit of olive oil. Heat to medium high heat and add chicken and onion. Cook until chicken is almost cooked through. Add taco seasoning (and water if your packet calls for it, ours did) and beans. Bring to a simmer and cook until chicken is cooked through.
  • In two bowls, layer the rice, chicken mixture, bell pepper and avocado. You can top with light sour cream or cheese, or just eat it plain (cause it’s the bomb as is anyways!)

4. Asparagus Sweet Potato & Chicken Skillet


  • 2 chicken breasts, cut into bite sized pieces
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2-3 cloves of garlic, minced
  • 1 large sweet potato, peeled and cubed
  • 1/2 cup water
  • 1/2 lb (225g) fresh asparagus, cut into 1 inch pieces


  • Heat a skillet over medium-high heat. Add olive oil, chicken and garlic. Saute the chicken until cooked through or about 7-10 minutes. Set chicken aside.
  • In same skillet, add the sweet potato and water. Cook for 7-10 minutes (I added the lid about halfway through to let the steam help cook them as well) or until tender-ish.
  • Add asparagus and cook for another 5 minutes (covered) or until tender.
  • Put half of the veggie mixture in each bowl and add chicken to both bowls.
